New Build(er) & Bios - UDMA?

Hi Folks - I just finished my first build and have been strolling through the Bios trying to make sure I didn't miss anything. In the Integrated Peripherals area is a section for setting Primary and Secondary IDE UDMA. It is currently set to "disable" and I am wondering:

1. What is UDMA exactly and what does it do?
2. Should I have this set to Auto?

I have two opticals (Lite-On DVD-Rom and Benq DVD-RW) and two Hard Drives (new WD Sata boot and 1 year old Maxtor Pata that was the drive I had in my last computer with my data and previous WinMe OS.) Once I get all the data off of the old drive I am planning on either trying to delete the WinMe or just reformat the whole thing.

Followup, the current transfer mode in System Properties of both Primary and Secondary IDE Channels is "multi-word dma mode 2" - is this correct?

any current IDE drive should be udma100 (- 5), ATAatapi 6
when and if you add an IDE drive you will have to change things in bios to reflect drive
some DVD burners will do udma2
you can download Sisoftsandra 2005 and check out your drives and what they are running at.
You can d/l HDtach and trest speeds
