Networking setup in 2012 R2 Hyper-V?

So I'm setting this server up for the first time and I have a few questions:

I currently have one NIC reserved for management and that has a static IP.

I have to create a virtual switch for the VMs, so I was wondering can I start off with just one other NIC in the virtual switch and then add more later? I would like to have the switch connect to 2 or three different subnets so in total i'll have about 4 NICs in the switch eventually.
When I add the NIC to the vSwitch, it doesn't need to have an IP assigned right? I assume the IP will be added on the VM side after the VM guest OS is set up.

If anyone knows of any good guides/tutorails that would be great! Thank you.
