Need to buy fresh (or frozen) uncooked, uncured ham. Yeah, this is about Christmas food.

As the title says!

I need to find fresh ham. About 8-10 lbs will do.
This town doesn't have a nice butcher shop and the normal grocery stores all have pre-cooked ham.

Uncooked, uncured ham should be sold as pork leg. You'll want the "upper " portion, or the butt....

Fresh Hams are hard to find.

If you're smoking just use a partially cooked one.

And you do want the "butt" end of the ham. This is the upper leg including the hip ball socket. 8-10 pounds isn't a whole ham, but a half ham. Halfs are sold as butt and shank end.

Also don't confuse with a "pork butt" as that is actually the front shoulder.

Yeah! Picked up 13lbs of fresh ham today. $1.99/lbs.
I had to special order it on Thursday last week.

It's now being cured for 10 days. :)
