Need to access a terminated employee's email, can I allow another user to do so?

An employee was terminated but may have received email since; is there a way that I can transfer any email she may have to another user? Note, the user has been disabled (but not deleted) in Active Directory.

The proper thing would be to FWD it to the employee. And, fix it so any further mail to that address will be bounced.
 
Some options:

1) Copy the old employee's emails to a PST file and open them as a separate mailbox in Outlook
2) Dump the old employee's emails to a PST file and copy them into a folder in the new employee's mailbox.
3) In AD, give the new employee the right to access the old employee's mailbox. The old employee's mailbox will show up as a secondary Exchange mailbox in Outlook. You'll have to re-enable the account to do that. Change his/her's password.
