Need suggestions for travel locations

My family is trying to find a place to travel this December/January. It will be after my first semester at college, and I have about 4-5 weeks off. In the past we have mostly traveled to Florida, but it has begun to lose its sparkle. We normally travel to Orlando, but we want some place this time that is less about the huge attractions and large crowds, and rushing around to get on all the rides before they close. We want something much more relaxing. We are interested in international travel.
My ideas so far were either to Greece (I have always wanted to see the ancient ruins), or some place in the Caribbean. Beaches would be nice, but aren't necessarily a must. Just a nice place that is slightly more relaxing than Disney World.
We would be traveling out of NH. It would be for three adults. What kinds of cost can we be expected to pay for everyone? The large sum estimations of different trips would definitely help as we cannot afford the most expensive places.

Thanks guys!

Who here has traveled to Greece? How expensive is it? How much can we expect to pay for international travel as far as air travel is concerned.

Never been there. Bring lube though.

I don't know what you would be into....but If you like Greece (I have been there before)......I may suggest Lebanon the vacation destination I am most familiar with (being Lebanese originally and all)......plenty of Roman , Phoenician and Greek ruins there too in addition to ruins from the time of the Crusades and the whole feel is very similar to many Mediterranean countries but is unique due to the diversity.

Also if you are planning on going during the winter.....Lebanon has an excellent selection of Ski resorts. The nightlife there is very vibrant....cafes....nightclubs...beach parties. That's where I go when I have a month to enjoy outside the country it's pretty well balanced.
Many of my friends have been there and enjoyed my recommendations below are some links that would be helpful.

Scenery
Plenty of Ruins
Snow Activities
Nightlife in Beirut
Beirut Night Life Guide

Is there a cost limit? You could consider like a transpacific/south pacific cruise. Would be a little more expensive and controlled but you'd be travelling to some of the most beautiful and unrushed places in the world. But thats definitely a more exotic option. But its a thought.

Not necessarily a cost limit, but cost is certainly a factor. With my parents supporting two children in college, extra cash is not really available.

It is my mom that has done the research, and she has said that many of the places she has looked into (Carribean, Greece, etc.) were going to cost as much as $5,000 per person, with there being four of us going. This is simply too much for us. Can we expect to get a decent trip like I described without paying this much?

just got back from Singapore ($1024 for tickets; $290 for hotel, 7days split among 5 people); had time to go to a indonesian beach resort for a 1/2 night and 1/2 day. I want to go back as soon as possible.

i went to a couple of hawker stalls that anthony bourdain visited in his No Reservations Singapore episode - had some sup tulang

I am all about cruising. It is a nice way to see new places.
There are a billion amazing places in the caribbean to experience that would be perfect. Start by browsing tripadvisor.com.

Anyone know anything about St. Thomas? I guess that is where my mother is looking into, particularly a place called, "Bolongo Bay." I guess our limit is actually more like somewhere around $6000 for the trip.

The problem of going any place these days is the cost of getting there. I am going to Vietnam in November, and the flight there nearly costs as much as the three week tour (hotel, food, intra-country costs). I haven't been to Asia yet...but I have heard that its very cheap once you get there.....Even with the recent plunge of the Euro/dollar....its still rather expensive to travel to Europe. Puerto Rico is supposed to be really nice...a 4 hour flight away from DC, and no passport required.

Another idea is to go visit the Rockies. Its a great time to go skiing there and its so gorgeous out there. Or visit somewhere else in this country.

St Thomas... is nice. Lots to do and see, but more often than not, LOTS of people depending on where you stay. I just was browsing the resort you are speaking of and I think it looks great. Small in size, yet still has all the features of a larger resort and a nice baech.
Make sure you take a day trip to St. John. Swim and sun on Honeymoon Beach!
