Playing newer 3d games with a single GTX 480 card does not seem to do justice anymore.
Need to go to sli if possible without spending lot of $$$.
That said could I do it with a simple mobo upgrade which then allows me to keep my current ram & cpu (see sig)?

Sticking with Gigabyte you have the GIGABYTE GA-P55A-UD4P at $185 before rebate.

It supports SLI at 1x16 and 1x8 PCI-E 2.0 speeds.

If you really want to push 2 x GTX 480 in SLI then you probably want one of the P55 boards which have the NF200 chip with additional PCI-E lanes.

You can choose between the ASUS P7P55 WS Supercomputer @ $190 before rebate and the EVGA P55 FTW 200 SLI @ $260 before rebate.

However, its debatable if buying a P55 mb for this amount of money is worth it when you can get an x58 mb with more PCI-E lanes and triple channel DDR3 for cheaper.

There are others as well, such as the EVGA P55 Classified 200 SLI @ $310 before rebate.

These boards will support 2 X 16 PCI-E 2.0 SLI and even triple SLI if you want to add a PhysX card or a third GTX 480 although I see some people complaining there isn't enough room for 3 cards the size of GTX 480's.
