Need help on my Rig.

Hey there guys. I recently purchased a new rig.
I am getting the install done by my local shop for my Koolance EXOS2 since I'm not the one to tool with pliers, anyways I need some advice:

Current set up:
Athlon 4800+ X2.
Dfi LANPARTY Crossfire RDX200
2GB OCZ Platinum DDR400 RAM.
Koolance EXOS 2 Watercooling setup in the Lian Li V1000.
ATI X1800 XT 512MB Crossfire ready.
Soundblaster X-Fi Fata1ity
Western Digital 76gb Raptor.
Western Digital 400gb 8mb cache slave.
Plextor 716SA ( Couldn't find anything else better 🙁)
Klipsch 5.1 Promedia Ultra
Apple 30" Cinema HD Display.

All in all guys, I feel great about my rig. There are a few problems though:

1. I feel like adding a 2nd x1800xt to juice the performance of my Rig. The problem that I face is many whispers saying the DFI is inferior to the ATI. To me, price is NOT the question, rather performance. I'd be happy to Keep my DFI if it performs as well as the ASUS MPV and also does not have problems with crossfire setup.
2. I didn't do the EXOS2 install due to me being scared I will seriously mistighten something and *splash* antifreeze is everywhere. Is watercooling 99 percent safe when done by professionals (My local shop is very very very capable and they are pros).
3. My friend said my 30" display sucks for games. I have a 20 inch and I play all of my games perfectly fine. Same apple, just NOT HD. CS source and Wow play to my eyes just fine and ghosting is minimal. SHould this suffice just fine?
4. I'm still worried about the ASUS MPV Vs DFI, please help 🙁
5. Adding the extra x1800xt, worth it ? Or just wait for Manta?

That 30" display should be awesome for gaming - although I can't afford one so I don't know for sure.

The system looks pretty good - you obviously care about BANG not BUCK.

Also, I wouldn't buy two X1800XL's now. Get one now and one later when they're cheaper. And a single one will play any game at high quality anyway.

For the cpu: I would choose something like a 4400 instead. Do you really think that the price difference is worth 200mhz?
Or maybe a socket 939 opteron also, they overclock nice, especially with your water/c.....if you can find one.
For the mobo I would choose an NF4 dfi board. If you look at the reviews, they are supposed to be better.
All the other parts look nice. If you want a 400GB WD drive I heard the RE2 was good and more reliable.

What are your ideas on case/psu?
 
why do you need THE best? hold off on the 1800 and consider opterons if you'll be watercooling. who knows, you might get past 3.2 Ghz watercooled
 
im not sure, but I believe I read somewhere that an x1900 series is coming out, dont take my word for it, but if its true and you have the patience, i say wait
 
Looked for the 512mb 7800 said It's too long ot wait

I'm gonan get an SLI setup in 6 months Just need something ot hold me off in the meanwhilee.
