Need chicken cooking ideas

I'm bored with the same old chicken. Here's what I have:

1lb skinless boned chicken breasts
1/2lb Ricotta cheese
1lb pasta (tri-color)
Pasta sauce (too lazy to make my own)

Now, I ask you, what should I do to jazz this up? I want to keep the flavors savory and it needs to go well with the above. Fresh hebs are not an option as I don't know of anywhere in town that they are sold. What would you do?
 
got any onions and taragon or thyme?

Nah, I don't have many herbs since like I said they don't have fresh anywhere.

So you're thinking maybe a pasta bake, hmm? I also have like 4 manacotti tubes. I could use those too.
 
I'd de-bone the chicken then butterfly the brests and stuff with ricotta. If you have eggs and bread crumbs first make an egg wash by scrambling an egg or two and then cover the chicken with bread crumbs and bake at 350 degrees. Serve over pasta and sauce...

You have a problem if you havent any herbs. Dried would be fine, but you are looking at something with no flavor as it stands right now.

no don't bake the pasta in there

you don't need fresh herbs to put the chicken in foil packs with onion slices, lemon slices, and some dried thyme and taragon.

you can usually get fresh herbs in little plastic packs in the refrigerated vegetable section

Bay leaf
Marjoram
Oregano
Thyme
Coriander

Mustard Seed

Orange peel

Very aromatic.

You're set. Make a sauce with thyme, chopped rosemary, and oregano as herbs (tomato of course) Undercook the pasta, place it on the bottom, add some sauce, some ricotta, pasta, and another layer of sauce, ricotta and pasta if you have enough. Of course some grated cheese on top would be good too.
 
I would lightly sautee the chicken to develop flavor, although some just boil it till its done. Shread it and lay it between the pasta and ricotta

Well, it's pretty good, thanks guys.

Next time I need to buy better sauce, and I need to flavor the cheese more. The chicken is so tender, it's almost like the cheese. 😀
 
I like to take some breats, legs, and thighs... I mix some salt, pepper, and McCormick seasoning... I think it's Montreal Chicken (a lot like the Montreal Steak seasoning I use for all beef products)... I sprinkle a healthy amount of the seasoning on the chicken, then pour about 1/2-1 cup of Italian dressing over it all... I cook it in a slow cooker for about 6-8 hours. So tender it falls off the bone, and smells great cooking, tastes even better =)
