Need BBQ advice

We're having a mini BBQ on Friday, and I need suggestions. What would you cook? What would you marinate it in? It's a gas grill :)|), which I've never used.

Please, none of that bratwurst stuff.

I was thinking spare ribs, but I'm not sure how long to boil/cook them. I'm also looking for sauce recommendations.

The longer you boil ribs, the more tender they are when you get ready to grill em. If you have time to slow cook them for a few hours, do that. It also helps boil some of the fat off them. ;)


If you're doing steaks, try marinating them for about 45 minutes in Dales. That stuff is also good on chicken or pork. Just take the meat and throw it in a gallon-sized freezer bag. Pour in a decent amount of marinade and move the bag around while you drink beer and talk to people at the BBQ. The reason people grill out is because it's easy. I think you'll be fine with whatever you do.

One more thing....I have a thing for tequila lime chicken as well as carribean jerk stuff for a spicy twist. Just throw some carribean jerk marinade in a saucepan with water and add pineapple wedges to it....it's a great garnish for chicken. ;)

Hmm, so should I just get a bag of chicken parts? It's going to be my roomate, his two adult brothers, 12 year old brother, and his mom.

Steaks are too expensive :)

Dales BBQ sauce, eh? I'll check for that. I live in a small town in Indiana, and this isn't a "culinarily rich" area. They only stock 1 bottle of Pace hot at the local grocery store :D

Would an hour be enough boiling for the ribs?

Don't boil the ribs. I don't know where this stupidity started or came from but all you do when you boil ribs is boil the flavor out of them.

If you're going to cook ribs on a grill you need to try to indirectly cook them. Arrange the charcoal on one side or only use one burner in a gas grill and cook them on the opposite side. Depending on how low you can get the heat, it could take anywhere from 2-6 hours. I cook ribs on my 3 burner Weber grill,using one burner, at ~225 degrees and it takes about 4 hours for baby back ribs, they're very tender and I never, ever boil them.

Thaw 'em out, season 'em the way you like and cook them like I said. DON"T boil them.

Cooking chicken legs/thighs in a gas grill is so much better than a charcoal grill. Just 15 minutes each side at 325 degrees and you got a juicy golden brown meal.

Also try some kabobs.... they need to be marinated

Don't boil ribs.
It robs them of a lot of flavor and natural juices.

It's far better to brine them for a couple hours, and cook over indirect heat (i.e. to the side of the grill)

I love doing kebabs. Usually I grab a package of stew beef (already cubed), which is cheap and already cut for you, but a little tough. So I marinate it in a bit of mango juice (natural meat tenderizer), coconut milk, red pepper, meat tenderizer, pinch of salt. Let it marinate for a couple of hours. Soak some bamboo skewers in hot water for about 15 minutes (this way they won't burn on the grill and the meat won't stick as much). Cut up some green red and/or yellow peppers, onions, mushrooms (you can leave these whole), cherry tomatoes, and pineapple (or mango or papaya) into bite-sized chunks. Stick meat and veggies and fruit on the skewers. Tip: always put the fruit next to the meat, the juices will make the meat nice and sweet and the liquid will keep it from overcooking. Cook on each side for about 15 minutes on each side, or until meat is browned and vegetables are soft and slightly browned. I like to serve them over wild rice.

Also, this is an excellent book for BBQ lovers, and this book will teach you how to make some delicious sauces & marinades. I recommend both to everyone who asks me about bbq'ing. :)

Ok, we're going with:

Hamburgers
Chicken (wings and legs)
Bratwursts

I looked and they don't have Dale's at our local store. They do have some "Mississippi Smoked Flavor" sauce, supposedly authentic. I might pick it up. What would work, about two bottles?

The big thing is the marinade. According to the commercial, marinating bratwurst in beer is good. I was thinking of marinating the chicken in lime juice, BBQ sauce, and some cayenne pepper (they won't let me go hotter).

Thoughts? We might also have turkey kielbasa (did I spell that correctly?).

yeah that's right, but why don't you just say sausage? kielbasa is just russian (and maybe some other slavic languages too) for sausage anyway :p;)
