Does the digital-out (either coax or optical) send a 5.1 signal? Or is it still stereo?

From another thread a few days ago, as I understand, its 2 Channel Stereo only.

5.1 is obtained only through Analog.

It must send some sort of 5.1.... My gf's brother got a home cinema system, with a pioneer dvd and a sony amp. The only thing he uses is the digital-out to get 5.1. And I would be really suprised if the hercules soundcard only offers it to be a 2 channel.

the only way to get a digital out to send 6 channels of audio (and a reciever to read it) is to have the audio in Dolby Digital format. Dolby Digital is a lossy compression scheme that allows you to keep acceptable bitrates even when playing back 5.1 channels.

you can have your software DVD player pass the Dolby Digital signal (not decoded in other words) to the soundcards, which sends it out the digital port.
