need an awesome chili recipe

I'm planning on making chili tonight for a few people. Anyone have any kick-ass recipes? Preferably something with beer, because I have a lot that I need to get rid of.

*update*

Made up my own recipe (borrowed stuff from other recipes), now it's simmering until 7pm or so. Here's what's in it:

1lb ground turkey
1lb sausage
16oz tomato sauce
10oz Ro-Tel (diced tomatoes + green chiles)
1 white onion
1 can kidney beans
3 tablespoons chili powder
2 tablespoons garlic powder
1 tablespoon cumin
1 teaspoon seasoned salt (used while browning meat)
1 tablespoon crushed red pepper flakes
1 can beer (Pabst)
a few drops of Scotch Bonnet pepper hot sauce

I think I might use elements from melty's "chilitastrophe" and mix it with this recipe and make a kind of Frankenstein chili. 😛

bean (kidney and black), beef, tomatoes, peppers (green, yellow, red), garlic, onions, chili powder, cumin. Then add whatever to kick it kick... jalapenos, hot sauce, habanero, whatever.

Brown the beef with onions. Toss all the other crap in. Simmer.

yeah, i can't take any credit... i stole the recipe from Cheli's Chili in Detroit. it's not a fancy recipe at all though, fairly common chili.

next time i plan to use "real meat", ie. chunks of beef 😉
 
I have found that a little (maybe half cup) cold coffee (leftover from the morning) helps give chili a little depth. I've made the same recipe one with, and one without the coffee, and found the one with just tasted richer for some reason.
It could be that I have lost my mind though.

God that sounds amazing. I'd probably have the ring of fire and not shit properly for a week, but it would be so worth it 😛.

ha, only thing I'd have to say is if you put beans it in and don't call it Chili with BEANS you should be punched in the throat because what you made isn't real Chili.

Beer in Chili? Ewww...
I like thick and chunky chili, not that vegetable soup style watery chili.

The only liquids that go in mine are tomato sauce and chili sauce.

I can say that what makes it good is NO CANNED ingredients and cooking over low heat for a long time, 6+ hours.

This is quite true. The majority of people do not understand that "Chili" is completely regional. This is further obfuscated by national chain restaurants pushing their own take.

In reality, the celery and kidney beans of the Midwest are every bit as legitimate as the no beans/beans of Texas or, the cinnamon of the Northwest.

OP, you have to find your own preferences and then maybe we can offer some good recipes.

I can only do about 5 unfortunately, so it'll have to do. 😛
 
This chili needs more beans.... and chili... as in jalepeno, green peppers, pasilla, bell, aneheim, serano whatever...

I'll include some on the next batch. I'm on a quest to perfect my chile recipe, so there will be many more opportunities to add and subtract stuff.
 
I have a secret family recipe that involves black coffee, flank steak, and masa. That's all I'm sayin' 😉
