Need advice on futur computer

I'm starting the building of a new computer (mainly for gaming and picture post-processing) and, since it's been 5 years since the last one, I would like some help.

That all looks good. What is the price difference between 6GB and 12GB?

Finally, I think that the 4890 is a better card than the 260 (any variant) so that should answer your question.

The 4890 would be better, but also costs ~$50 more. Wouldn't the correct comparison be 4890 vs. GTX 275?
 
It would if you compare overall specs but not price, i think.
So I'm probably buying the GTX 260 core 260 SC edition since it has 160$ off at NCIX.
