Need advice on buying kitchen knives

Globals are very high quality knives. They aren't too expensive either, considering what a good knife costs. But you have to consider that the Henckels are not even worth the money. They are yet another example of a company bloating their product with the name they had built, and moving operations to cheaper factories / or lower standards. They are now sold by Target / Wal-Mart, etc. And they're way too expensive for what they are. If you have to buy a cheap knife. I recommend the Graves signature Cro-Mo X5 Forged chef's knife from Target. I bought the last one I have ever seen (given I only shop at one Target sometimes). It's a beautifully (comfortable) shaped knife, and sharp!!!! Forged, molded rubber handles, and the tang and blade are solid one-piece forged.

Henckels are now junk. In fact everything you listed is not worth your money.

Do some loking around. Henckles and wustofs have both been making crap lines for a while now. They do still have quality lines but they are overpriced and use antiquated technology.

So, it looks like some lower end Henckels are made in China, but their high end ones are still German made. I will say they are high priced, but that doesn't make them a bad knife. I think the big argument here is that people are aguing like ALL Henckles and Wustoffs are crap now because they have cheap lines made in Germany, while I think DB and I are speaking more towards their higher end stuff. Some here seem to be saying because those names have cheaper lines, that they are all cheap now. I will agree Henckles are high priced, and maybe a tad overpriced, but that is what the market will bear for the name.

The one thing that bothered me in your post was this...

That makes me laugh... What new revolutions are there in "knife technology"? Knives are still made similar to the way they always have been...regardless of company. The importance is in the steel quality, and the forging process. It's not like there is some new super knife that will rule them all..it's...a....knife.

Also, I'm leaning towards Henckels, despite what some of the people said... the lifetime "almost no questions asked" warantee is very important to me... What I'm wondering is either which Henkels I should go with for a balance of price and quality

Or, what else should I get... I can't currently spend more than 150, and want to get a Chef's knife or Santoku (or both!), a paring knife, a utility knife, and a block out of it.

Also, any recommendations on cheapish but decent (and either dishwashable, or cheap enough that I'll dishwash anyway) steak knives?
