If you get a full cover case you don't need a screen protector. It's not bouncing around in your pocket like a phone is. For my Mini I had a these two: (I preferred the latter but both were good.)

If you don't have other Apple products get a spare cable or two. The Amazon basic ones are good to save a few bucks. Other than that I've never bought other accessories for any of my iPads. I have bought a stylus to play with Pixelater but haven't messed with it yet.
 
I buy the cheap screen protectors from China. The glass ones work best for me. It'll keep it from losing the oleophobic coating over time.
 
My iPad rarely leaves my house and I've never bought a screen protector. Unless you're traveling with the iPad, consider going without one.
