Claymore is absolutely beautiful. Give it a shot
Berserk is pretty cool, excessive violence FTW
Ghost in the Shell
School Rumble is recent-ish, check it out, comedy,
Lucky Star I just started watching, the first episode sucks but it starts becoming mildly funny. Worth seeing, you'll like it if you enjoyed Azumanga Daioh (older, worth seeing)
Haruhi Suzumiya is still recent, it's a comedy and worth seeing at least once. Some people really love this one
Full Metal Panic The Second Raid isn't that old, and it was pretty awesome. Check out Fumoffu and the original FMP is you haven't seen them already.
Note: Fumoffu is all of the comedic parts left out of the first FMP, and The Second Raid is the proper sequel to the original FMP and retains a lot of the comedy present in Fumoffu
I recommend One Piece, if you're willing to sit down to (approaching) 400 episodes

Some parts can drag, but the overall series has been truly epic.
One Piece stands alone in that it has significant story progression throughout its many arcs. It's typical of long running anime to repeat a basic arc over and over, but swapping out villains. One Piece is guilty of this for perhaps the first season (when there are only 2-3 main characters), but it has escalated into a story of epic proportions. It has gone from a simple story of an honest pirate to an epic story featuring an international conspiracy and a full cast of characters filling the spectrum of personalities. Some of the fights are somewhat ridiculous, but all of the plot is excellent. The art style requires some getting used to. I'd say easily 80% of the episodes are worth watching (whereas Naruto and Bleach and other long running classics struggle to hit 50%).
For a good idea of how the rest of the story will go, you have to watch One Piece through the final island of East Blue, before entering the Grand Line. By this point, most of the main characters have appeared and their back stories have been covered (and won't be covered again except in clip episodes, which are easily skipped), and the true story begins. The crew is not complete, but you really begin to feel that this series has serious potential by this point. So far, I have not been disappointed.
I recently saw Ouran High School Host Club and thought there was some true comedic genius in there. It's reverse harem, but that never stops this series from being hilarious
