Take a look at Mail Administrator HowTo.

But your best bets are qmail, sendmail or postfix!! Now go do a search on Google Linux!

For a fronthend to help configure those, since that's what I understand you want when you say

run on X

I use exim for SMTP and qpopper for POP3. They don't have GUI's but the setup is nearly trivial.

If you want an Exchange replacement you won't find one.

I would suggest an IMAP server so your mail stays on the server and you don't have to f' with syncing up difference locations, you can also setup webmail easy this way. Courier, Cyrus, wu-imapd, etc are all available, free and work well.
