My RAM situation

I got one stick of PC2 8500 and 2 sticks of 6400 RAM, If I run them all together I get 3 gigs but if I get rid of the 8500 I get 2 gigs in dual channel... what would be the best option, 2 gigs of dual channel or 3 gigs single channel?

It depends on your usage. You should test the system in each configuration doing the things you built it for and compare the results.
