I make a similar pork chop except I use Carribean Jerk seasoning and a dash of brown sugar I rub it into FAT pork chops liberally EVERYWHERE and let it sit 30 min. Coat it really well! BBQ it at about 325-350 and letting each side get flame kissed at first then slow cook. ~35 min

oooo that sounds good too! Do you make your own Carribean Jerk seasoning, or is there a brand that you buy?

McCormick that is all. $3.49 a pop the rub keeps in the juices for the most part similar to pan searing except tastier! Even if you don't let them sit and just throw them on the BBQ they will still turn out great.

i made chicken jumbalaya (sadly i didnt have everything for a REAL jumbalaya) but it still rocked🙂

Jumbalya is like chili- you can put whatever you want in it. I made a recipe for Jumbalya "stew" a few years ago and make it every year around this time. I adjusted the ingredients to peoples tastes around here:

chicken
shrimp
smoked sausage

Plus, I added the red beans and rice into the mixture instead of serving them on the side. Makes a damn fine meal, but I can just "make a little bit". We end up eating it for a week afterwards.

you just killed the natural pork flavor with all that cayenne pepper

No kidding. Ridiculous. Spice freak. Sentence fragments. Just phrases.

Why would you go through the trouble of getting a good hunk of meat, and then ruin the natural flavors with a flavorless seasoning? Spice isn't flavor, it's a sensation, and not a particularly pleasing one.

Salty seasonsings FTW!
