If I wanted to purchase a system that I could set up to run two monitors and one large LCD TV to run photo slideshows, would it be more practical to get a card like the Matrox Parhelia APVe, or to get two cheaper pci express cards in a crossfire or sli setup?

Basically you are wanting to drive three displays? If so and raw 3D horsepower is not a major requirement then definitely look at Matrox. They have a couple cards that can drive up to four displays.

Right, but the Matrox is $300. I could get a couple of cheap PCI-Express cards and do the same thing, right?

I say grab a integrated graphics board with AMD 780g or upcoming nVidia 8200 and add a matching card to get up to 4 displays. You'll then also have the added benefit of hybrid crossfire/sli. Th integrated hdmi can also output audio for when you want audio in addition to video on your lcd tv.
