There are lots of tweaks you can do to make the stock Android email program play well with Exchange, but if this is a business account, do the simple/foolproof thing:
buy Touchdown
Also, if you have a Fascinate, Odin Froyo onto that sucker ASAP.
The stock 2.2 and 2.3 clients are pretty decent but minimalistic. I don't remember the stock 2.1 client working well with our exchange server.
Like they said above, buy touchdown for $20 and make it easy on yourself. I bought Roadsync ($10) which worked great for me until my company changed exchange servers now I can't get it to sync. Roadsync is a pretty good exchange client for $10 but I'm not sure I'd recommend it at this point since it's completely broken for me on Android 2.3 and Exchange 2010.
Many companies won't allow pre-Froyo devices to synch with Exchange due to missing security features such as remote wipe, enforcing a PIN and maximum idle. Touchdown is the alternative if you're stuck on Eclair.
