Not the bland Kraft kind.
Sorrento is the best commerical brand, though I am not sure it is available everywhere. Polly-O is also ok.
Forget "shredded". Only chunk Mozzarella that you slice yourself.
And if you need to save 10 calories an ounce by buying the "part skim" kind you might as well not eat it.
 
I have to disagree... Edam melts 10x better than mozzarella. Just my personal opinion.
 
i usually get the poly-o stuff. a fresh market in another town has fresh mozz, but its not worth the trouble and expense to get it, ill snag some sometime if im there i guess
 
Why even bother melting it? A slice of mozzarella, a slice of tomato and a basil leaf on a slice of baguette with a little olive oil is just about the most perfect appetizer ever.

That's the idea - it's plain fresh cheese meant to absorb flavours. On a pizza it soaks up the herbs and the oil from the meat, or if you're just having it on bread, cover it with olive oil and black pepper.
