If I buy a motherboard that has a crappy sound built in, is it possible to put a Sound card in and work from that instead of that crappy sound?
 
In one word: yes.

Just install the soundcard & install the drivers. You may need to set the default playback/recording device in Control Panel --> Sounds and Multimedia but its no biggie.
