Any suggestions? I think there might be an add on pack for flight simulator 2004, but I'm not sure, plus it probably isn't as comprehensive.
 
Its old but falcon 4 with some mods are really realistic and there is even a cold start mod for the falcon that would teach you how to really start a falcon since every button and flight prep step is included.
 
For a true sim, Falcon 4.

Most recent, sort-of-sim, Lock On: Modern Air Combat.

EDIT: Sorry, those are combat sims, not sure if that was your question. If not, FSX or that other flight sim program... forgot the name but I'm sure google has it.

That game is so close to perfect. The lack of a dynamic campaign just kills it though. 🙁
