do you HAVE to use a sli psu on a sli capable mobo? or only when you use your gpu's in sli?

Essentially i want to buy a sli mobo, eVGA (122-CK-NF68-AR) Motherboard, but i had already bought a very nice 500 watt psu a couple months ago, do i have to invest in a new psu even though i only want to use 1 pci-express slot?

No you dont, you can use any PSU with SLI mobos... only thing is that you might face problems doing a SLI setup IF you do it...

I personally wouldnt but a SLI mobo... its going to go Obsolete pretty soon with the advent with dual cores
 
theres good psus around that dont claim they sli ready but good enough for sli.

you can get away using your 500w with sli even but you better not have much components attached and not overclocking and so yes you can use it with just 1 gfx card. whats the model of the psu? psus reduce there effiency over time so that 500w psu in 2 years wont be 500w.
