But the best one I ever had in my life was in Madrid, in an slightly upscale restaurant (it was our anniversary). They specialize on steaks, and all famouse matadors eat out there. A well known place among the locals.

Well I'm trying to figure out what the yellowish-tinged crust is all about--did he just pan-sear it?? If so, why is the color yellowed and not a darker maroon/brown like I'm used to? I'm thinking he pan-seared it in olive oil and that's what the yellowish tinge is.Originally posted by: jpark932

And I know this, MAN!!! I'm just trying to figure out what HE did to it! Sometimes I baste my ribeyes in a marinade if I'm cooking them with Indian food but normally I just use a little red wine and grapeseed oil for panfrying the smaller cuts. Yeah. If you get a good steak, it's a crime to do anything but use salt and pepper before your grill it.

yummy goodness!. I had the "Maudeen's Center Cut Filet" the frist night (asked for 16 oz) and Filet Mignon K Bob the 2nd. Both were super yummy. I think I am going to build a house in Texas if the steak is this good in a chain resturant. I would love to go to a good steakhouse in Texas.
