Mmmmm Peameal Bacon Roast

I just finished cooking this peameal bacon roast.

It smells amazing. This is a pickled pork loin rolled in cornmeal (they don't use peameal any more 🙁). Its also very lean with almost no fat and not too salty.

I am steaming some nice baby potatoes for this.
