never thought of doing that heh. i usualy just use fresh stuff.

I keep it in an airtight containter (jar) but strain it first so there is no meat/chunks in it. Everytime you open the jar it's like heaven.

Must be a southern thing.

We filled up a couple of jars of bacon grease several years ago and they're still fine, stored in the frige of course.

Usually add a couple of teaspoons to bake french fries with.

My mom had two iron skillets that never left the top of the stove. To the side, next to the ladels, etc. was a ceramic jar for bacon grease, it got a once yearly cleansing, but besides that and her steel spatula to strain the pieces out it was the permanent reservoir (un-refridgerated mind you) for bacon grease. Everything that was cooked in those skillets and that was 70% of what we ate, was cooked in bacon fat. The rest was baked, then doused in gravy that was made with bacon grease or stewed with ham hock or salt pork.

After my mom was diagnosed with breast cancer and was going through treatment she adopted a healthier diet and replaced the bacon grease with Crisco, hydrogenated vegetable oil... it didn't last long she went back to bacon grease eventually...
(she's an almost twenty year survivor btw).
I associate lard with Mexican cooking for some reason... I think lard, I think refried beans... mmmmm

Man, this thread is making me hungry...

heh my mom was diagnosed with cervical cancer and they told her to eat more healthy. so she went to Crisco. it lasted a month and back to the lard.

Lard is not just Mexican. she grew up near a Amish community and picked up a lot of cooking from them.

No offense intended, but how the eff are you people that eat food cooked in bacon grease every day still alive?

Also, that burger looks very tasty, Eli. Good work!

Diet isn't the only factor in health.

People used to eat fatty foods all the time but obesity has never been anywhere as problematic as it is now.

Eli, you noob, you spread the mayonnaise on the bottom bun! It looks like it came out of a squeeze bottle... I hope you made it yourself. 😛 Mayo goes on bottom for a reason.

sure if you eat that all the time and don't do anything then yeah its bad. But growing up we didn't do that. We were not allowed to watch TV if it was sunny out and warm enought to be out.

heck i remember spending all day playing basketball, baseball or rideing my bike.
