If you have some corn meal, take it and make a thin paste with water out of it. You then add it while the chili is cooking, and it will thicken it up.

BTW, next time be a real man and use beef :p

lol I just followed the recipe... I was tempted to switch to beef, though. Turkey is.. well, turkey.

Too complex.
Beef + ground peppers + green pepper + onions + spices + salt + corn flour + olive oil* = mmmm.
Spices can vary, but I'm fond of oregano and garlic--and cumin is a must.
* The meat I use is very lean, so can't cook in its own fat.

If you don't believe me, head to the store can get a Carol Shelby mix. Not as good as scratch, but some good stuff (and I love that flour :)). Tomato can be nice, but the stuff is good even without that.

Personally I prefer to have chili with a bit of a kick to it. No, I'm not one of those nutcases that makes it so hot that you can't taste anything. But 1 or 2 (depending upon how much) jalapeno peppers add a nice kick. For a bit more of a kick add 1 habanero pepper.

Oh, trust me, the chipotle peppers I put in there have a good kick.

ps soke the beans in water for 24 hours then drain and use the beans............... degasses them :)

My favorite recipie:

2 tablespoons vegetable oil
2 onions, chopped
3 cloves garlic, minced
1 pound ground beef
3/4 pound beef sirloin, cubed
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 (12 fluid ounce) can or bottle dark beer
1 cup strong brewed coffee
2 (6 ounce) cans tomato paste
1 (14 ounce) can beef broth
1/2 cup packed brown sugar
3 1/2 tablespoons chili powder
1 tablespoon cumin seeds
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 fresh hot chile peppers, seeded and chopped

DIRECTIONS:
Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1 1/2 hours.
Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.

I've made this often enough to do it from memory, I do cut the coco to 1/2-1/4 tsp, like to add 3 kinds of beans, kidney, pinto & garbonzo, use a coarse ground beef instead of the sirloin chunks too.

im not much of a cook so i use that carroll shelby chili mix. it's tons better than any of that canned stuff. :)
