Mexican lasagna

local supermarket had Stouffer's lasagna on sale. (2 for $6 for the 18oz, 4 for $10 for the 10oz)
was looking for the meat lover's version. apparently it's been replaced with this new Mexican lasagna.

Bought the 18oz. Not bad. a little bit spicy.
I think the meat lover's was 19oz?
 
I've made Enchilada casserole that is vaguely similar to this many times using corn tortillas, ground beef, and more. Always turns out well.
 
Safeway Select has had Mexican Lasagna for a couple years at least. I like it for a change once in a while.

I hope you just mean "replaced" at your local grocer, I'm going to riot if the meat lover's has been discontinued. It's still listed on their website.

That's the beauty of Tex-Mex, it's pretty much foolproof. Almost any combination of a starch like tortillas/noodles, a meat, hot sauce and melted cheese will taste good. That's how Taco Bell does it, every dish is the same ingredients just packaged slightly differently.

I do a Mexican pizza. Normal pizza dough, the sauce is made with meat, onions, peppers, salsa and spices. Cover generously with Monterrey Jack and cheddar, bake, serve with sour cream on the side. It's killer. But ultimately, it's not any different than a taco or a Mex-Lasasna or a chalupa or an enchilada or a burrito.
 
I have an Annies Amy's Mexican casserole in microwave this very minute. Never had it before, but I like their stuff.

I was at walmart looking at their frozen food, and saw beef vindaloo. That's not really a thing, is it?

Guess I was thinking about the pretzel I wanted, but those punks at the walmart annies were shut down when I went to get a pretzel :^(

A+. I put a bunch of El Yucateco brown sauce on it, and it was delicious.
