I worked at Arby's for 3 years as a beef slicer. I guarantee if you use WD-40 you will see that restaurant shut down for good. Only food grade oil can be used.
I was very disturbed the first time I saw that iridescent colors in the sliced beef. I immediately shut down the slicer, stopped making sandwiches, and found the manager. She laughed. That coloring is harmless and tasteless. It occured in about 2% of the roasts I've cut into.
Slightly off topic: One really funny thing I've seen is metal in the roast beef. Twice while I was working there, I heard a sound of metal dropping onto the metal slicer. I looked down and a BB was sitting next to the pile of sliced beef. I guess teens often go to farms and shoot cows with a BB gun. If the farmer didn't notice, the wounds would heal - trapping the BBs in the roast. So you COULD have metallic beef...
