This is a bit glammy, but it's still my favorite of theirs. The song "Burnnn!" off of the Power Metal album. (First one with Phil on vocals.)
Also, I really liked the Cowboys from Hell Album, Cemetery Gates, Psycho Holiday, Domination, etc ....
The Vulgar Display of Power album rocked as well. Haven't really listened to much of their recent stuff, though I do like one of Phil's other bands, Superjoint Ritual...

I have that on CD from when they released it in th 90s (with projects in the jungle as well) I really like the Power Metal album, not so much I am the night ....
 
I would say the average song from "Cowboys from Hell" album was better than the majority of the rest of their work. I stopped really listening at "The Great Southern Trendkill" since they turned from a hard metal band to a screaming metal band, imo.
