Memory usage question

Hey guys got a question or two and figured I would ask around and see what you guys say about it.
I use gpu z to see whats going on with the video card since it's easy to alt+tab and see it. I game at 1366x768 on a 720p hdtv. I had a evga 8800gt 512mb card and when playing MW3 with every setting put at max gpu z reported memory usage at 480mb for the highest reading.

Now I have a gtx 260 and same settings but my memory usage shows up as 719mb for the highest reading. Really just wondering how does memory usage work in games. Just by switching cards I am using 239 mb more of memory at the same res and settings. Does that make sense?
 
Ok so I just forced 1920x1080 on the in game settings, the game looked better, text was smaller but whatever I'm not reading a book lol. Here is what I came up with at 1920x1080 everything max like the other times
853mb memory usage at the highest point
Gpu load at the highest point is 79%
