To summarize here quickly, I just made a system upgrade where I swapped out my mobo and processor.

The RAM I bought a year and a half ago (Patriot PC2-5600+) is rated to 700MHz, at 4-3-3-12 timings, 2.2Vmax. I had run it in my older mobo at 4-3-3-10, 667MHz (5400), 1.9V for over a year.

With this new mobo (Asus P5WDG2WS-Professional), I can use PC2-6400 800MHz or better, so I thought that I'd give the old Patriot ram a test since it did well in the reviews and nobody knew how high you could go with it. I found out through extensive Memtest86 runs. Here are my two choices:

4-4-4-12, 800MHz, 2.20V
5-5-5-12, 889MHz, 2.20V

Which is a better choice here, faster speed, or lower latency? I'm thinking that I will stick with the higher speed for now.

I did try other combinations and lower voltages. Everything would either not POST, or it would fail Memtest86 consistently around the 49% mark.

It would be nice to get some of the new Corsair memory and run it at 1111MHz, but I'm pretty happy with 889MHz. The processor I picked is the E6600, and the mobo says that the core is unlocked so it's time to play some more. :)

EDIT: Apparently the E6600 is not unlocked. It says it is unlocked in the BIOS: "Ratio Status: Unlocked (Max: 20, Min: 06)." No matter what I change it to, the value I entered does stick in the item I can change, but the frequency does not change after a reboot. I'll try the FSB at a later date once I decide that everything is working nicely.

Thanks.
