i have 8 GB of 1066mhz memory with 7-7-8 timings...

and also a

4gb 1600mhz memory (my system can only run them in 1333mhz) with 8-8-9 timings...

which ram should i use? i use Adobe Creative suite a lot and play a lot of BF3 + MW3

goddamn cant wait for haswell to be released.. 32 GB of 2133mhz with 5-5-5 timings sound REAL NICE 😀

How much memory does your system use? The timings aren't going to make that big of a difference, if you need 8GB for Adobe, go with it.

well all of them are 2 gigs each, i was wondering if my 1333 memory could also run in dual channel while my other 1066 could run in its own speed...

All your memory needs to run at the same speed. But with todays CPUs if you don't have enough RAM than more is better than faster. The practical speed difference of timings or a single step of frequency is pretty minor.

If you run all sticks they just default to the slowest speed. Of which I doubt you will notice. Adobe uses RAM. The more the better.
