I have a Nanya 512mb PC2700 (166mhz) ram stick and I'm getting a msi neo platinum with a athlon 64 3200+. Will it work with the mobo untill I get a new memory stick? I should be getting a new one around the beginning of december.

It should manage, yeah. I've seen people running even PC2100 with A64's around here.

In general, that's a Yes. The AMD64 memory controllers are specified to handle anything from 100 to 200 MHz, PC1600 to PC3200 standards.
Furthermore, the performance delta on AMD64 between PC2700 and PC3200 RAM isn't as much as one might think, since the CPUs are pretty good at cacheing and prefetching. Unlike Intel's P4 series, where the best and fastest RAM is required for good performance.
