I need to know why the McChicken doesn't come with pickles.

I don't know... but when I worked there years ago (hey, first job...) it was probably the most popular special order regarding the McChicken. Right ahead of "add cheese."

Chick Fil A does pickles and chicken on their sammiches and i think it tastes pretty damn decent
