Mass Effect 1 & 2.

During one of my ME1 playthroughs I was fighting Saren (first part) and no matter what I did I couldn't dent his shields. They instantly regenerated. None of my powers worked, no gun made any noticeable difference to his health. I think I had to restart to actually get through it, because I couldn't do anything. He was also sending nonstop rockets at me. It must have been a glitch I guess because it wasn't like that the other times I fought him.

Cause that is what is happening to me.
I dent his shields a little. BAM. Full strength if I duck behind a box.

you're playing the part where he gets possessed right? For that part I just ran around in circles constantly shooting him and spamming all my powers, and I would eventually get his health down. He took A LOT of shots though. I was playing on normal though, and I was never in danger of dying. One thing I found that helped was pausing the game by opening up the powers menu, then aiming on him, since he only stops for a second at a time and that time is usually wasted trying to find him.
 
People say that the main storyline in ME2 (collectors/reapers) is weaker than ME1 (hunt for saren), and they're probably right. But I think the recruiting in ME2 more than makes up for it. The characters are very interesting and the loyalty missions are great in my opinion.Yeah it's less directly related to the story, but characters such as Mordin and Grunt specifically are very cool.

Be sure to go and chat with each of your members after any main mission. Some of them have very interesting conversation (Garrus, Mordin, Thane, Tali)
 
Mass Effect 1 as a game is much weaker than what Mass Effect 2 is, BUT the story in ME1 is more epic than 2, where the Collectors don't feel like such a direct and massive threat as do Sovereign and Saren.

ME2 feels more "full" around the main story with your team characters stories and interaction with them.

ME2 it is abit sad they tuned down the RPG elements so much, but the equipment management in ME1 was a bit tedious.

I'm looking forward to what ME3 brings along. I have just about finished the 2nd playthru for ME1-2 with a different character than what I first used.

One thing to consider is that second acts in 3 part stories are often weaker than those which precede/follow them. I suspect that the final installation will be the best of both worlds in that it continues with the superior gameplay of ME2 and a powerful story like ME1.
