Managing Multiple Ipods

I've got one ipod set up in itunes to sync the selected music/podcast libraries.

I've got another that just has music, but I don't it to have the same as the first or interfere with the sync process setup for the first.

So what's the easiest way to just add and subtract songs loaded onto this second ipod?

Just a word of warning that option is really only suited for ipod classic's If its an iOS device I would choose another option.
 
Name the two devices something different. I use playlists to sync multiple devices. I also use Copy Trans which is an itunes replacement to add media to devices without blanking the existing content. Its how I added movies to my mothers Ipad for an extended roadtrip. You could use itunes for the always sync and the other method for the manual sync to keep things separate.
 
I'll have to look at that. My collection is almost entirely CD ripped mp3s so I can easily drag and drop to android devices. And I was hoping for something fairly easy to manual sync to the ipod that stays in the car as a hard drive and rarely has its content changed.
