If you're going to give the students a break for Christmas and Easter, why deny that? Winter break I could see, because there are other holidays at the same time. But Easter moves around on the calendar, so if they're making a point of giving the students a break whenever Easter falls each year, I think it's stupid to refuse to call it Easter break.
That said, I don't see the point of changing BACK after they've already renamed the breaks winter and spring break. It's just a name, and it's only going to cause people to get pissed off. People need to learn to pick their battles - something as insignificant as the name of a school break should not matter. The people who do these things to "fight back" against political correctness are just as bad as their counterparts on the PC side. Like everyone who gets pissed off about "Happy Holidays" instead of "Merry Christmas." Who the hell cares?!
