They were probably just regular bulls, and didn't even know Karate

I once beat my dog at chess ... that doesn't make me the world's best chess player

I agree completely. I went to basic training with a guy that did nothing but talk about what a bad ass he was. He had photos of himself and Chuck Norris and various other martial artists sparring and training together. He talked trash all the time about how he could beat anyone's ass in the barracks. Naturally, me, having wrestled for the better part of 8 years at that point, decided one day to take him on. I did a drop step single on him while his first strike caught nothing but air, picked him up and tied his arms up and sat on his chest. Within seconds, he was incapacitated and all his "training" went in the shitter. His final resort, after everyone started talking $hit back at him was to grab my pinky finger and start to bend it back. I warned him one time that he should stop or I'd bury his nose into his sinus cavity with a well placed headbutt and he relented and gave up. It was clear he'd never encountered a grappler before. I gained a lot of respect from my peers after that incident.

sounds like you only ran into a pretender. read mas oyama's motto's, a true martial artist wouldnt be talking $hit. i have known a wannabe wrestler who got pulverized by muy thai friend of mine, so it goes both ways. i am having some **serious trouble accepting the fact someone who had done martil arts for 8 years would be talking $hit, i bet he was some punk ass who took summer martial arts class. find someone of your own caliber with comparable amount of training and you would be in for a good surprise.

They talk about that guy in this book i have, "Zen and the Art of Fighting", it's a pretty lame book, but I got it for 10 cents at a bookstore. I don't trust todays karate. Infact, I don't trust any of todays McDojo's since most stand up fighting is pretty weak compared to grappling/ground fighting. Though there are certain schools which teach the importance of live combat. Those are the schools that pwn everyone at tournaments and fights. We would get cocky Tae Kwon Do guys come into our MMA school every once in a while (we studied Muay Thai and Brazilian Jiu Jitsu with some stick and knife) and those guys were so annoying. They would come in talking trash about how long they've trained and how great they were, and how flexible they are and stuff. But like once they got in the ring, or actually held pads for someone who has been training for about a year, they were toast. :) hehe, it was always fun when that happened.
I have always wanted to pit myself against an animal to see how I would fare. I had always figured I could beat the crap out of an animal, like not just kittens and puppies either, I thought "oh.. man, I could totally fight an elk and win." And then earlier in the spring I was in my backyard (there is a forest right behind my house) and this deer comes running at me full speed past me, like a foot and a half away from me. Man, that was so scary. I really don't think I'd want to mess with any animals unless I was forced too. Especially bulls.
