melted semi-sweet... if it does crack a bit, I cover it with a chocolate ganache.

which flavor cheesecakes have you made besides chocolate? there are two i wanna try my hand at next: espresso chocolate, and turtle.

I've done chocolate, pumpkin (with bourbon-flavored whipped cream, A++), and most of the fruits (cherry, strawberry, lemon, etc).

pretty much plain and chocolate are all I do on a regular basis, though. they seem to be the real big crowd pleasers; everything else is hit or miss depending on the eaters.

I put a layer of sour cream whisked with vanilla and sugar on mine. Bake cheesecake to done, take it out, smooth out layer of sour cream, back in the oven for 5-10 more minutes.

I made a white chocolate cheesecake during the solstice celebration and it was great, everyone really liked it. I suggest you look into a white chocolate cheesecake.

Snickers Cheesecake
used finely ground Oreos + butter for crust, filling has 13 chopped fun-size Snickers, and mini chocolate chips. topped with layer of caramel sauce, and chocolate sauce

Pumpkin Cheesecake
crust is finely ground gingersnap cookies + pecans (3:1 ratio). light layer of caramel sauce atop crust. filling has 1/4 cup maple syrup, and 4 seasonings (cinnamon, ginger nutmeg, cloves). topped with caramel sauce, and chopped pecans.

White Chocolate Raspberry Cheesecake
finely ground Oreos + butter for crust. light layer of hot fudge on crust. swirled seedless raspberry jam into filling (pretty sure i overdid it though). topped with fresh raspberry, grated Lindt 70% cocoa chocolate, and white chocolate sauce.

Chocolate Peanut Butter Pie (inspired by Reese's Peanut Butter Cups, LOL)
(it was supposed to be a cheesecake but because i kept tweaking the recipe as i was making it, and therefore overmixing it -----> result: pie texture :oops:)

ground Oreos + butter for crust; thin layer of creamy peanut butter atop crust. chocolate filling has mini semi-sweet choc chips + 20 mini Reese's PB Cups (halved). peanut butter filling has 1 cup PB (next time, i'll only use 3/4 cup). topping is peanut butter sauce, and chocolate sauce.

yup! :) i only use Nielsen Massey vanilla for anything that requires vanilla. :biggrin:

I get 1 liter bottles shipped in from Mexico. Even when the bottle has not been opened, you can smell the flavoring through the seal :thumbsup:

Stumbled on a local flea market.

The best cheesecake recipe I have used so far is from The New Best Recipe. It's called "New York-Style Cheesecake".

That, and a few other recipes make the book worth picking up on their own.
