from your first post, current mac minis are more than enough for you to work, however i would suggest you wait for update as newer series will lower price in older one (by least $100 i hope) or you can get afterward on ebay or here on fs/wtb/wttf thread for good price.
as for office, internet and multitasking goes yep mac minis are great considering you can get bigger LCD if you want or just hook it up to your LCD tv and kick back while doing lazy work.
