Defense Grid isn't an RPG but neither is Torchlight really 
. I liked Torchlight 1 much more than 2.
You might like Fallout New Vegas more than 3, it was done by Obsidian not Bethesda. Obsidian = Fallout 1-2 (Black Isle staff), Neverwinter 2 MOTB, Star Wars KOTOR 2.
Everyone should play Vampire the Masquerade: Bloodlines but it sounds like you're picky about graphics quality and it uses the original Source engine (Half-Life 2).
You can play the Star Wars MMO as 8 single-player stories (4 Republic, 4 Empire) and skip all the MMO stuff.

You're very odd if you won't give the Mass Effect series a chance.
My girlfriend, who is not a gamer and is more of a book/tv/movie person, had to play all 3 just for the story.

To OP: You aren't even willing to TRY Mass Effect?? What part of it do you think you will dislike? The first games controls are a little clunky yes.
But you can play through all three games with the same character, and easily consume 120 hours if you like to do side quests. It easily ranks as one of the best game series that I have ever played.

While this is a bit of a unconventional suggestion both Lord of the rings online and star wars the old republic mmorpgs can be played as a single player games that if you are a fan of either of the two fantasy settings could be very engrossing.
I thought the original story line from Lotro was a very well done unique story in the setting (this coming from a guy who could not stand the movies because of much they deviated from the books). The world is fairly large and mmorpg mechanics are fairly standard rpg like.
Swtor also has some very engrossing stories if you enjoy the setting. 8 to choose from (one per class) and if you do one per side there no repeating of side quests.
I think for an immersive single player experience you would have to subscribe for the duration though. I have only played both games on a subscription basis, not the free to play options, but from what I understand free to play options will either make you miss out on side story and or not give you enough xp to just level through experiencing the story. As a subscriber though both games will keep you at or well above level needed to complete stuff by just enjoying the game as a single player experience.

Yeah it's not out on a PC. I very rarely play console games. In fact, The Last of Us was the only console game I played in the entirety of 2013. But it was very much worth it. Despite it being my only console game played, it was my game of the year, easily.

My biggest problem with SWOTOR was I was beta testing for so long by the time the game released I had literally played almost every class until mid game or later.
The first time I played Dragon Age Origins I couldn't get past the introduction to the game. I recently installed it due to all the Inquisition hype and gave it another shot. I'm 25 hours into now and while it's somewhat dated at this point it's also one of the better games I've played in a long time.
The Witcher series is an odd one. I cannot play the original. It's just so clunky, but Witcher 2 completely cured everything I hated about the first game. I think the combat in the Witcher 2 is amazing once you get it figured out. There is also one QTE bossfight fairly early in the game that it sounds like a lot of people just stop playing the game at that point. Do yourself a favour, google how to do that bossfight (this was not focus tested well at all) and then get on with the rest of the game it gets immensely better after that. I think I tried to beat the Kayran like 30 times before I said fuck this and went to youtube for help.
Finally Mass Effect. Anyone unwillinging to try out mass effect should just sell their computer. ME1: is a 8/10 (clunky controls stop it from being 9/10. ME2 was a 9/10 for me. ME3 was a 10/10 for 98% of the considerably long game, and then became a pretty big disappointment in the last few minutes. Still totally worth playing however.

Well, if you didn't like Fallout, Metro or Bioshock I can only recommend Daikatana since you obviously don't like fun.
How about adventure games like Syberia or The Longest Journey? Grim Fandango is coming back too, though I don't think it's out yet. Those are very world-centric.

Bring a book to read on the occasion you are trapped in a locker for long periods of time.
Honestly you just sound like you have a very narrow path of game types you like. Skyrim in no way sucks you in...it just spits you out into a world...like pretty much any other sandbox game and it is nothing but fetch quests (which you complained about in some games..so I really don't know. Games are dirt cheap, grab a few when they are $1-5 or in bundles and try them....). I try games I would never have thought I'd like simply because they are so cheap and there are some real gems out there that aren't AAA titles.

If you want another large open world game, look at kingdom of amalur. Very big game, fun combat, and plenty of quests. It surprised me, plus its frequently on steam sale for <$5. I started playing it late last year and then suddenly spent many hours there, I'm still only a quarter way through after say 20hours, but stopped playing it when I inherited a ps4 and switched attention to it.
People never seem to mention this game anymore, but it's a pretty fun experience:
