Nonsense. Gold and silver are similar on the hardness scale. There are plenty of sterling silver knives. You don't see much made with gold because it's expensive. Plus silver has antibacterial properties. Which is why the wealthy ate with silver spoons.

You can't just buy solid gold flatware. You have to privately commission it. But if you have the money, you can get it made. Tiffany used to make 18k gold flatware in the early 20th century but those sets go for crazy money now. You're looking at million dollar+ at auctions.

Tiffany made this solid 18k gold 566 piece set that weighs 270 pounds for Elbert Gray. Gray was founder of US Steel.
