Looking for a classroom wireless solution (LAN traffic only, ~50 clients)

Hi all,
I will teach a class next semester that would require the students bring their laptops/tablets and connect wirelessly to a mobile "server" I bring to class. The class size is around ~50 students.

The traffic is light (some very basic web pages; most computations happen either at their browsers or the "server"), and is internal only (i.e. no outside internet access at all).

What is the best solution that is also economical? Is any consumer router OK handling this load? Is connecting a Unifi AP to the LAN port of the laptop server and using the laptop as DHCP server feasible?

multiple APs needed. They can be consumer, so get a few of them and assign different ssid. And you can use the dhcp server on the router. You could go with unifi but it is a bit more work. Single AP fifty client is a bit much.
Distribute clients over ssid and frequency (2.4 and 5 GHz)
