not to eat than what to eat. I've effectively cut soda, doughnuts, ice cream, candy, and other high fat stuff out of my diet. I'm not above eating said foods, but I've recently started to work out 6 days a week, so any excess fat/sugar I ingest shouldn't last long.
As for what to eat:
Learn to cook fish. It cooks quickly (generally 15-30 minutes) goes down light and fills you up for a long time. It's also lean, and packed with healthy fats, protein, and other good stuff. Just don't fry it, as that negates most if not all of the health benefits. I'm a seafood fanatic, so this works perfectly for me.

I eat fish (occasionally shrimp, maybe crab and/or lobster if I feel like splurging), 3-4 times a week.
Snacks: Baked potatoes in the microwave. A bowl of blueberries also works, but they're out of season for the time being, and thus expensive. I gorged on those during the summer though. Popcorn will fill you up, and is a good source of fiber (as are blueberries) but there's not much in the way of fuel in it. You won't get much of a boost.
Eat a small salad after dinner. The vegetables stimulate digestive enzymes and make you feel full for a longer period of time. I just eat the raw vegetables with no dressing (I've yet to find a dressing I actually like) but that's me.
I don't keep tabs on my calorie intake. I just make sure that the calories are quality.
