I am wanting to set this up.. which distribution do you guys recommend and why? (Security is the key factor in my circumstance)

Books/tutorials on how to set this up? each configuration aspect.

Remote management is also very important, keep this in mind for the distro reommendation.

lifewithqmail.org made setting up qmail easy. But qmail isn't free.

There are books on qmail, postfix, and sendmail. I'm sure there are books on others too, but those are the big 3, IMO.

All the remote management is available through SSH, which comes with every distro I know of, and probably every distro I don't know of as well.
I'd recomend Debian for security, for two reasons:
It won't hold your hand too much, hence forcing you to have a decent understanding of what you're doing.
Debian's stable branch is just that, stable, and security updates are quick to show up, and easy to install.

What n0c means by "not free" is in the speech sense, not the beer sense.

i might just send this guy $5.. looks like all that info is worth it.. even though i could probably pass CCNA.. but i need CCNP/CCIE.. and linux is just plain awesome.. well thanks guys for the help

I've recently had a bad sendmail experience. In my very limited experience with mail servers, I've found the postfix learning curve to be much flatter then the one for sendmail.
