If you're looking for burning programs for Linux, you'll need to understand that only SCSI drives are supported. IDEs can work via SCSI-emulation. Most likely if you installed RedHat 7.2 and you had a burner in your system then, RH picked it up and already enabled SCSI-emulation in your kernel for you.
All burning programs (that I've seen) are based off of cdrecord and mkisofs; some standard Linux utils (don't worry you've got em).
Also to use most of them you'll need to run them as root(use the su command from an xterm).
That being said, Xcdroast is pretty easy to learn. But you'll want to experiment naturally as all intelligent people do 😀
