I was wondering if there is a mail/calender client that works with windows and linux. That can sync between the two?

I think the ability to synchronize stuff like that isusually more a function of the server, not the client. For instance, an IMAP mail server will provide very nice mail synchronization and you can use any old client for that.

A calendar might be a little different as calendar servers are less common. Groupware products like Exchange can provide this. Novell has some interesting open source solutions in that area but maybe that's overkill for what you were thinking about.

I remember reading something about Sunbird being able to do calendar synchronization but I don't remember if it required a server of some kind or if it had even been worked on. Might want to investigate though.

Even so, does evolution have the ability to share data without some kind of server?

Yep. There's even an Exchange plugin, I believe Novell GPL'd it after they bought Ximian.
