I am the biggest curry junkie. But since moving to the US 11 years ago (from England), it's almost impossible for me to get a Vindaloo that appropriately hot. Phall is non-existant. Still, there's a couple of places I go to where I'm known to the waiters and the chef, so all is not lost.

I really enjoy Japanese style curry more than anything else.

combine that with a good don katsu and a beer and i am SET.

korean curry is also awesome.

korean or japanese != thai != indian

Corrected. All curries are different, can't say one is better than the other. I like them all.

For Indian curry ... try the parampara brand. Comes in packets with all the oil, spices in a sealed bag inside. My experience with the brand:
- always add onions to make it better. Cut and pan saute them. Then add the spices and heat it up, then add the meat/chicken.
- add more chicken/meat than what it says or it'll end up being overly-curried.
- substituting coconut milk instead of yogurt turns out really well

Try the nawabi chicken mix. Just had it last night. Pretty good.

I've always been a slave to a good lamb curry of any type.

I have a pretty good stomach for hot food and don't mind eating really spicy curries (and I mean spicy as the Indians would measure it not as westerners would).

PS: dennil do you work graveyard? Just curious because I often see you post really early in the morning Toronto time. Or really late depending on how you count the hours ;)

From my experience with my Indian friends...and the Indian restaurants I've been to with one of them... they can't handle spicy like I like spicy....

your friends are girly-men ;)

What's wrong with garam masala and curry power? We use both together to make curry chicken. I curious as to how "real" indians make homemade curry.

Curry powder tastes like hog vomit. That's what's wrong with it. Garam Masala is ok if you are pressed for time, but like all ground spices it degenerates rather quickly and doesn't taste as good as using fresh spices.

honestly, I don't like the stuff the Koreans make (and I'm Korean).

The flavor isn't as robust as the Japanese stuff.

The Korean stuff is a bit more soupy, though of thicker consistency than the south asian stuff.

*edit* I certainly like "stuff"
